Detailed product description

A 15-hectare farm in the south of the state of Minas Gerais, Brazil.

Ivan Prado de Melo and Weder Batista are brothers-in-law who run the Fazenda do Juquinho farm. They mainly grow varieties Topazio, Yellow Catuaí and Yellow Catucaí.

The main priority of their farm is the environment, they avoid the use of chemical fertilizers and prevent soil erosion by using organic minerals in agriculture. Their plan is to create a new area for growing coffee without ploughing the soil, thereby preserving all the important minerals already present in the soil.

And so, they maintain the unique flavour of the region.

They produce coffees only by natural processing. The coffee is dried for 50 days on terraces in the sun. In the taste of this coffee there are notes of dried dates, cocoa, nuts.


AeroPress Bypass recipe.

-brew ratio 1:5
-20 g coffee
-100 g water 94 °C
-grinding 20 clicks (Comandante)
-brew time 2:00 min

1) 20 g coffee, add 100 g of water, let it bloom for 50 sec
2) Close the Aeropress and push through only with the weight of the hand, i.e.. We don’t have to push too hard
3) We should have around 70 g-80 g of concentrated coffee, which we dilute with 80 g of hot water
Do not hesitate to experiment with the recipe in different steps. Change the grinding, dilute with more or less water. The important thing is that you like the coffee.
