The Gigante community is a rural farming community located in the Huila region of Colombia. It is located at the foot of the Cordillera Central mountain range, at an altitude of approximately 2,000 m above sea level. The village of Gigante is home to around 2,000 people and is known for its beautiful nature, rich history and strong cultural traditions. Farmers carefully hand-select ripe coffee beans at their highest ripeness, ensuring the highest quality for processing. Traditional methods of wet processing after thorough washing, fermentation and drying are used to preserve the original taste.
Lot is a mixture of three varieties Yellow Bourbon, Caturra, Tabi, which have been processed by the fully washed method, which means that the pre-fermentation phase is longer than in classic washed processing.

-brew ratio 1:5
-20 g coffee
-100 g water 94 °C
-grinding 20 clicks (Comandante)
-brew time 2:00 min
Procedure:
1) 20 g coffee, add 100 g of water, let bloom for 50 sec
2) Close the Aeropress and push through only with the weight of the hand, i.e. You don’t have to push too hard
3) We should have around 70 g-80 g of concentrated coffee; dilute it with 80 g of hot water
Do not hesitate to experiment with the recipe in different steps. Change grinding, dilute with more or less water. The important thing is that you like the coffee.
