Farm
This coffee comes from the Nariño region, specifically from the village of Aponte, where it is cultivated by smallholder farmers. The coffee grows at high altitudes above 1,700 m.a.s.l. on micro-farms ranging from only 0.5 to 1.5 hectares. Local farmers follow their own unique traditions and rules; as a result, coffee has become a symbol of freedom and pride for them.
Processing
The farmers from Aponte are true pioneers of Honey processing in Colombia, a method they have been intensively perfecting since 2017. Thanks to specific microclimatic conditions—low humidity and consistently low temperatures throughout the year—the coffee dries slowly and evenly. This precise processing, combined with the high-altitude terrain, gives the coffee a complex and delicate flavor profile.
The coffee is characterized by a syrupy body, a full flavor of blackberries, and a subtle caramel finish. It is ideal for a sweet espresso as well as a balanced, juicy filter coffee.

Water profile: GH 5, KH 3, 94 °C
Method:
Pour 60 g of water over 20 g of coffee and let it bloom for 40 seconds.
Slowly pour another 120 g of water in circular motions.
When the previous pour has almost drained, add the final 120 g of water — again slowly and in circles.
Total extraction time should be around 2:40.
Don’t hesitate to experiment — adjust the grind (if bitter notes dominate, go coarser; if the cup tastes flat or watery, go finer) or play with the brew ratio.
